The Worthy Extra Day (or Three): Why Fresh Food Packaging Has to Do More Than Wrap

A punnet of strawberries has a short working life
By the time a strawberry reaches the shelf, it has already had a busier week than most of us.
It has been grown, picked, packed, cooled, transported, handled, displayed and inspected by shoppers with the cold-eyed speed of people choosing fruit for lunch box and breakfast. One soft corner, a little misting in the pack, the faint suggestion of tiredness, and the whole thing starts to look like tomorrow’s markdown.
Fresh food is unforgiving like that. Mushrooms brown at the edges. Brassicas lose their clean, crisp look. Peppers wrinkle. Bakery goes from inviting to apologetic. A narrow window of opportunity, where freshness is judged quickly and visually.
This is why the usual packaging debate feels oddly incomplete when it comes to fresh food. It often begins at the end, with the bin, when it should start much earlier, with the food worth protecting.
There is plenty of packaging that deserves scrutiny. A sleeve around a sleeve. A tray that exists mostly to look premium. A pack that protects food from the outside world, but does little for the small climate forming inside it. Reduction is the right instinct where packaging is doing little useful work.
But fresh food makes the tidy argument untidy; sometimes the smallest layer in the system is protecting the most valuable part of it.
What a difference a saleable day makes
The food waste numbers are not small, but the tonnage only tells part of the story. WRAP estimates that food surplus and waste in UK primary production amounts to 3.6 million tonnes a year, worth around £1.2 billion at farm gate prices. By the time a product reaches retail, the value at risk includes far more than the crop itself: labour, energy, refrigeration, logistics, shelf space, forecasting and customer trust.
UNEP’s Food Waste Index Report 2024 estimates that 1.05 billion tonnes of food were wasted in 2022 across households, food service and retail. Food loss and waste is also estimated to account for 8–10% of annual global greenhouse gas emissions.
Against that backdrop, the critical question is not simply whether a pack exists. It is whether the pack earns its keep.
For a grower, one more day can mean more of the harvest reaching its intended value. For a retailer, it can mean fewer tired-looking packs, less pressure on markdowns and a little more room for error in replenishment. For food service, it can increase operational flexibility and ease the daily gamble between availability and waste. For a shopper, it may simply mean the strawberries survive long enough to be eaten rather than discovered, accusingly, at the back of the fridge.
Packaging rarely gets credit for the waste that does not happen. We believe it should.
From wrapper to working layer
A refrigerated lorry is never described as “just a vehicle”. Everyone understands that its purpose is not merely to move food, but to keep it in the right condition while it moves.
Fresh food packaging should play a similar role, only closer to the product. A functional pack is not just a wrapper. It is part of the product’s immediate environment, shaping moisture, condensation, visibility and the conditions that influence how long food remains saleable.
This is where a more grown-up packaging conversation begins. Weight matters. End-of-life cannot be ignored. Recyclability is critical. But in fresh food, the decision has to start with the product: what does it need from the pack to stay good, remain saleable and stand a better chance of being eaten rather than wasted?
A fogged-up pack can make perfectly edible produce look suspicious. Excess moisture can encourage mould. Poor visibility can quietly kill consumer confidence. In categories where shoppers buy with their eyes first, shelf appeal is not decoration. It is part of whether the product sells.
What the Woodly® trials found
Across eleven customer and grower trials, packaging made with Woodly® was compared with current commercial formats under matched storage conditions. The tested categories included strawberries, mushrooms, bell peppers, pointed peppers, broccoli florets, cauliflower florets, purple sprouting broccoli, Brussels sprouts, leaf salads, croissants and iced buns.
The clearest produce wins appeared in categories that benefit from a lower-oxygen modified atmosphere while also needing moisture to escape; the trade-off many fresh-food packs struggle to balance.
In strawberries, packaging made with Woodly® delivered up to three additional days of saleable shelf life. The trial also showed significantly reduced visible moisture and condensation, clearer packs, reduced mould development and better end-of-life appearance.
For brassicas, the gains were two to three days across several SKUs. Cauliflower florets and broccoli florets moved from five to seven days. Purple sprouting broccoli moved from seven to ten. Brussels sprouts moved from seven to nine.
Mushrooms gained one day of mould-free shelf life, with reduced condensation and browning. Bell peppers gained three days, with maintained freshness and crunch, improved pack clarity and no condensation. In bakery, iced buns gained one day, with softer dough, maintained icing quality and a more pleasant eat at end of life.
For people outside the fresh food trade, a day or two may sound underwhelming. Inside the trade, a day can be a margin event. It can change what is sold at full price, what is marked down, what gets wasted and what still looks good enough for a shopper to choose.
There’s never a one-size-fits-all
Not every product improved. Functional packaging is less like a universal wrapper and more like a recipe: the right result depends on the ingredient. Some products need a high barrier. Some need protection from light. Some may do better with no packaging at all. Others need the harder double act of atmosphere and moisture control. Rocket salad, baby leaf and croissants were weaker fits, with too much moisture removal leading to dehydration or texture loss. Fresh food is not one category, and the material, format, product physiology, supply chain and target shelf life all have to work together. When they do, the product’s chance of being sold and eaten is protected.
Better packaging, better arguments
WRAP’s research on fresh produce waste shows why fresh food has a habit of ruining neat arguments. Selling loose can help people buy only what they need, while packaging is critical when it protects fragile or fast-spoiling products. The test is what reduces waste in practice.
The industry does not need a sentimental defence of packaging. It needs better evidence of when packaging is worth using.
The promise of functional packaging, including applications made with Woodly®, is not more packaging for packaging’s sake. It is packaging that pays its rent. If a pack gives a grower a better chance of seeing the crop sold for its value, a packer a cleaner product to handle, a retailer more full-price selling time and a shopper a few more days to eat what they bought, it has done something far more useful than simply wrap. It has protected value all the way down the chain.
When functional packaging does its job, the business case and the sustainability case become one and the same: more food kept good for longer, more of the crop sold at value, and less of everything that went into it wasted. What a difference a day (or three) makes.
